There’s a spot in Condado that sat empty for years. It was supposed to become a Hard Rock Cafée that never got finished. A few months ago, an entrepreneur showed up and decided that space didn’t have to die. A few weeks ago, I walked through Azul Restaurant in Condado ahead of its opening, and I have to admit — personally, I felt some hope for this project, beyond everything we’re living through in Puerto Rico right now. What George Azih built from scratch
George Azih moved to Puerto Rico five years ago and noticed something I think a lot of people my age can relate to: there isn’t really a place — or there are very few — for people past their 20s who don’t necessarily want to dance to reggaetón, but aren’t looking for white tablecloths and hushed silence either. That lounge where you can stay out late, talk, have a drink, listen to real music. That’s what Azih is going for with Azul. The space was designed by the same team behind Catch in Las Vegas and The Garden Room in Atlanta.

The menu is designed by Chef Whitney Thomas, known for her run on Hell’s Kitchen, season 23. She took control of the kitchen in January 2026, after coming on as a consultant in September of the previous year. In her own words, she drew on Latin American cuisine using ingredients from local Puerto Rico farms: “I don’t want to be one of those people who come here, import everything, and give nothing back to the community.”
Live music and still being able to talk
One of the biggest problems I run into at most of the places I visit is that, when there’s live music, it gets hard to actually have a conversation or even hear your server. Azul plans to have live music, including symphonic sets designed to cut through the room’s noise without taking it over. According to Azih, he has bigger ambitions for the music program, but that’s something we’ll only really know down the line.
Is it possible to eat in Condado without feeling like a tourist?

Azih wants Azul’s design to draw on how La Concha historically pulled it off: a 50/50 mix of locals and visitors. To make that real, he’s got a plan I think is one of the smartest things I’ve heard in a while: a discount program for concierges and hospitality workers. The logic behind it is that if you want locals — and especially industry workers — recommending the place, they have to be able to eat there first.
Condado has a well-known problem: the good restaurants calibrate their prices and vibe for the visitor, not for us locals. Azul is betting that doesn’t have to be the norm, and I’m here for it. In a Puerto Rico that feels less and less made for locals every day, having spaces like this is genuinely refreshing.
What do I think about Azul Restaurant pre-opening?
I can only speak from the perspective of someone who’s had the chance to see the work in progress and talk to some of the people behind it. Concept and execution are two different things. A 50/50 split sounds great on paper. Personally, I think La Concha is one of the few places that’s actually managed to keep a genuinely diverse mix of locals and visitors — but that’s mostly thanks to the pull of the Casino and Fifty Eight. Whether Azul can sustain that once the initial hype wears off remains to be seen.
What I can say: when I walked the space with the GM, it didn’t feel like someone selling me a concept. Chef Whitney talked about the local farms the way chefs talk about things they actually believe in, and I give that real weight. Eventually, the restaurant also plans to become one of San Juan’s brunch spots. The concierge program still strikes me as the smartest move they’re making ahead of opening.
I still don’t know if the food will be worth what they charge, or if the symphonic music will feel as thoughtful in a packed room as it sounds on paper. What I do know: that lot sat empty for years, and whatever opened there was going to draw attention either way. Azul strikes me as a far more interesting answer than a Hard Rock would have been.
